Chef Clare’s Motto’s:

  • ·         There is no freedom without discipline.
  • ·         Whatever you do, endeavor to be the best that you can be.

Clare-isms:

  • ·         A pint is a pound the world round.
  • ·         Just because its silver doesn’t mean it’s not hot.

Definitions:

  • ·         Petit Fours: small cakes or small cookies 2-3 bites. The size of a silver dollar about two inches.
  • ·         Pat Sucre: Butter cookie dough aka brysselkex= butter tea cookie
  • ·         Scaling: Mise en Place. Measuring out ingredients.
  • ·         Cookies: small cakes

Bad recipe’s in book:

  • ·         Yellow cake
  • ·         Chocolate chip cookie
  • ·         Pg 528 cheesecake recipe (scratch out the amount of salt and just put a pinch of salt.)

Weighing:

  • ·         Liquids like eggs, water, and milk/cream all weigh the same. A pint is a pound.
  • ·         Liquids like oils and honeys are heavier so it’s not always true for those.

Scaling:

  • ·         Always always always double-check scaling before you start mixing.
  • ·         Keep your scaling/mise en place away from your neighbors scaling.
  • ·         Liquids go in deli cups. Everything else goes on parchment papers.
  • ·         Always sift flour and the dry ingredients that are in the white bins first.

Methods:

  • ·         Creaming method: for cookies and cheesecakes. Start with fat(butter/peanut butter) and sugar. Mix into a smooth paste in the mixer with a paddle. Then add your eggs and flour.

Sweet Table:

  • ·         Look into Austrian method and South African method.
  • ·         Keep everything in pale/pastel colors
